Gardener Shanna's Colorful Roasted Cumin Cauliflower Recipe
1 small-medium head of purple cauliflower
1 small -medium head of orange cauliflower
1-2 tablespoons olive oil
salt & pepper to taste
2 teaspoons of cumin
2 teaspoons paprika
2 teaspoons garlic powder
1/2 teaspoon chili powder
(serves 4-6)
Trim and cut your cauliflower into florets. Rinse your cauliflower and lay on a towel and pat it dry. Put cauliflower into a large mixing bowl. Drizzle with olive oil, season with salt and pepper to taste, sprinkle on cumin, garlic salt , paprika and chili powder. With your hands or spoon gently mix your cauliflower to get all the florets coated. Layer on baking sheet lined with parchment paper and do not overcrowd. Bake at 400 for about 20-25 minutes until it is browned and flip half way through cook time. Once roasted, you can sprinkle some fresh herbs like parsley or chives on top for an extra burst of freshness.
