Cooking is a wonderful activity that offers numerous benefits for individuals of all ages, and it’s especially rewarding when exploring healthy ingredients like chia seeds. Encouraging young gardeners to prepare their own meals is a fantastic way to build their confidence. Not only does cooking foster creativity and self-expression, but it also promotes valuable life skills such as planning, teamwork, and problem-solving. The exciting part of this recipe is that it requires only a few ingredients and no baking at all.

Now gardeners, let’s talk about chia seeds! These tiny powerhouses are packed with nutrients, including omega-3 fatty acids, fiber, and protein. Incorporating chia seeds into recipes, like the delightful Strawberry Shortcake Chia Pudding, not only enhances the nutritional profile but also adds a unique texture. Chia seeds can absorb liquid and expand, creating a satisfying pudding-like consistency that is both filling and nutritious.

Gardener Aidan’s Strawberry Shortcake Chia Pudding

  • 2 cups of fresh strawberries, halved

  • 5 tablespoons oats

  • 2 teaspoons vanilla

  • 2 tablespoons maple syrup (or agave, or honey)

  • 2.5 cups of milk (we used almond milk)

  • 7 tablespoon chia seeds

Combine strawberries, oats, vanilla, syrup, and milk in a blender and blend until smooth. Pour the mixture into a dish and stir in the chia seeds. Allow it to set in the refrigerator for 3-4 hours or overnight until it transforms into a thick and creamy pudding. Gardener Aidan suggests that you can always add a bit more chia to thicken your pudding after it sets.
