Gardener Shanna's 6 Ingredient Cottage Cheese Flatbread

Hello, gardeners! Today, we're exploring a fresh, quick, and delicious6 ingredient recipe - Cottage Cheese Flatbread. Gardener Shanna’s Cottage Cheese Flatbread:

1 Cup Oats

2.5 Cups Cottage Cheese

¼ Cup of Pepitas (pumpkin seeds)

2 tbsp Unsalted Sunflower Seeds

2 Eggs

1 TSP Baking Powder

¼ TSP Salt (optional)

(you can swap with any seeds or nuts you enjoy)


Instructions:

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.

  2. Combine the ingredients - In a large bowl, mix the oats, cottage cheese, pepitas, sunflower seeds, eggs, baking powder, and salt until well combined.

  3. Spread the mixture - Transfer the mixture onto the prepared baking sheet and spread it out evenly to form a rectangular or circular shape, about 1/4 inch thick-keep in mind it will spread out while baking.

  4. Bake in the preheated oven for 45-60 minutes or until the flatbread is golden brown and firm to the touch.

  5. Cool and Cut - Allow the flatbread to cool slightly on a wire rack before cutting it into desired shapes, such as squares or triangles.

Serving Suggestions:

  • Top with Fresh Herbs: Add a sprinkle of fresh basil, cilantro, or chives for an extra burst of flavor.

  • Top With Butter & Jam : For a sweet and savory combination.

  • Serve with Dips: Pair your flatbread with hummus, cheese spreads, tzatziki, or a creamy avocado dip.

  • Make it a Meal: Use the flatbread as a base for mini pizzas with your favorite toppings.
