One Sheet Wonders

Dishes be gone! Simple, satisfying and super easy to clean, the sheet pan cooking craze is one food trend we are definitely getting behind. We find these meals are a 'close cousin' to the crock pot with minimal ingredients that yield tasty results. Today we are sharing our absolute favorite recipe yet-Baked Feta & Broccolini! There is something for everyone on this sheet pan to enjoy and it serves well over pasta, orzo, farro, with a fresh loaf of bread or as a side dish!

Sheet Pan Baked Feta & Broccolini


✅ 1-2 Bunches of Broccolini (washed & trimmed)


✅ 1 Pint of Cherry or Grape Tomatoes (cut in half)


✅ 1 Small-Medium Yellow or Purple Onion (cut into small wedges)


✅ One 8 ounce Block of Feta (cut into 1 inch thick slices)


✅ 1 Lemon Cut In Half (cut one half into thin slices)


✅ 1 Tsp Ground Cumin


✅ 2-3 Tablespoons Olive Oil







Pre-heat oven to 400. On a sheet pan, mix tomatoes, broccolini, onions, and lemons with olive oil. Sprinkle with cumin, kosher salt and pepper (to taste) and mix again. Gently tuck the feta slices in between the veggies. Roast in the oven for about 20 minutes, and give the veggies a gentle stir about half way through. The broccolini should be tender to touch and the tomatoes should have a nice blister.

The cumin is the real star of the show here-it ties all the ingredients together

in a sophisticated way.


(You can drizzle a little olive oil and fresh lemon juice over everything right before serving).
