Simple Spring Salmon

We love recipes that are simple, sophisticated and super easy to make! This deliciously bright salmon and asparagus recipe is made in a foil pouch which also means it's a mess-free meal! The fresh notes of lemon pairs beautifully with the garlic butter sauce. This family favorite dish

serves well over rice, farro or couscous. Scroll down for the full recipe.

Simple Spring Salmon

✔︎ 3 Salmon Fillets

✔︎ 2 Tbsp Fresh Lemon Juice

✔︎ 2 1/2 Tbsp of Vegetable Broth or Stock

✔︎ 3 Cloves of Minced Garlic

✔︎ 5 Tbsp of Butter Cut Into Small Squares

✔︎ 1 1/2 Tbsp of Hot Sauce

✔︎ 1 Bunch of Asparagus washed & Trimmed

✔︎ Salt & Pepper For Seasoning

✔︎ Tin Foil

-Preheat oven to 425°F.

-Take 3 long slices of heavy duty tin foil (or double wrap regular foil) and use this as your base for each piece of salmon.

-Divide the asparagus evenly for 3 servings.

-Mix broth, garlic and hot sauce in a small bowl.

-Season your salmon on both sides with salt and pepper to taste.

-Place 1 piece of salmon on center of your foil and layer asparagus on one side.

-Spoon your garlic sauce over the salmon and asparagus.

-Repeat for all 3 pouches.

-Divide the butter evenly over the 3 pouches and place on top of salmon and asparagus.

-Fold the foil lengthwise and bring in the edges so the broth does not spill out. Wrap loosely at the top.

-Place the pouches on a baking sheet and bake for 10-12 minutes. (The internal temp should be about 145°F.


Garnish with lemon slices and fresh chopped herbs (we used parsley) but basil or cilantro would pair nicely too. Enjoy!
